Golden Oat & Cottage Cheese Bread

Hearty, wholesome, and full of texture, this oat bread is perfect for breakfast, lunch wraps, or a nourishing snack. Packed with protein, fiber, and flavor — and so easy to make!


Ingredients

(Serves approx. 6–8)

  • 4 eggs
  • 600g cottage cheese
  • 4 cups oats
  • ¼ cup sunflower seeds
  • ¼ cup sesame seeds
  • 1 tsp salt
  • 1 tbsp baking powder
  • A small handful of fresh parsley, chopped
  • 1 tsp dried oregano

Method

  1. Preheat your oven to 180°C (356°F).
  2. In a large mixing bowl, crack in the eggs and whisk until lightly frothy.
  3. Add the cottage cheese and stir to combine.
  4. Mix in the oats, sunflower seeds, sesame seeds, salt, and baking powder.
  5. Sprinkle in the chopped parsley and oregano for an herby lift.
  6. Stir everything together until well incorporated.
  7. Pour the mixture into a lined Pyrex dish or baking tray.
  8. Bake for 30 minutes, or until golden and firm to the touch.
  9. Let it cool slightly before slicing and serving.
