Ingredients
(Serves approx. 6–8)
- 4 eggs
- 600g cottage cheese
- 4 cups oats
- ¼ cup sunflower seeds
- ¼ cup sesame seeds
- 1 tsp salt
- 1 tbsp baking powder
- A small handful of fresh parsley, chopped
- 1 tsp dried oregano
Method
- Preheat your oven to 180°C (356°F).
- In a large mixing bowl, crack in the eggs and whisk until lightly frothy.
- Add the cottage cheese and stir to combine.
- Mix in the oats, sunflower seeds, sesame seeds, salt, and baking powder.
- Sprinkle in the chopped parsley and oregano for an herby lift.
- Stir everything together until well incorporated.
- Pour the mixture into a lined Pyrex dish or baking tray.
- Bake for 30 minutes, or until golden and firm to the touch.
- Let it cool slightly before slicing and serving.
