Oven-Baked Sumac & Yoghurt Chicken Drumsticks – Juicy, Zesty, and Effortless

Cooking has always been more than just a culinary task; it’s a journey through time and culture. Today, I share with you a dish that brings the vibrant tastes and fragrances of the Middle East to life—Sumac and Pomegranate Molasses Chicken. This recipe, a harmonious blend of tangy, sweet, and rich flavors, is reminiscent of warm family gatherings and treasured heritage.

The Origins of the Dish

The combination of sumac and pomegranate molasses is deeply rooted in Middle Eastern cuisine. Sumac, with its distinctive lemony flavor, is a staple in this part of the world, often used to impart a citrusy tang to dishes without the acidity of lemons. Pomegranate molasses, meanwhile, offers a deep, sweet, and slightly tart note that enhances the richness of meats and complements the sumac perfectly. Both ingredients reflect the resourcefulness and flavor profile of Middle Eastern cooking—effortlessly marrying sweet and sour to create unforgettable taste experiences.

A Special Memory

For me, this dish holds a special place in my heart. It reminds me of the bustling weekends spent at my grandmother’s house, where every meal was a sensory celebration. She had an incredible knack for transforming simple ingredients into something extraordinary. I remember those leisurely afternoons when the aroma of roasting chicken would fill her kitchen, and the sharp yet sweet scent of sumac and pomegranate molasses would beckon everyone to gather around the table.

The chicken would emerge from the oven, golden and succulent, the once vibrant marinade forming a rich glaze. We would pair it with fluffy rice and fresh salad, relishing each bite amidst stories and laughter. This recipe, with its tantalizing blend of spices and heartwarming memories, has been passed down through generations, and today, I share it with you.

Creating the Dish

Ingredients (serves 4-6):

For the Chicken:

  • 1 kg chicken drumsticks, washed
  • 2 onions, quartered
  • 2 carrots, chopped
  • For the Marinade:
  • Juice of ½ lemon
  • Juice of ½ orange
  • 2 tbsp yoghurt
  • 2 heaped tbsp sumac
  • 1 tbsp pomegranate molasses
  • 2 tbsp tahini
  • 1 tbsp salt
  • 1 tbsp honey
  • 2 tsp black pepper
  • For Cooking:
  • 4 cups water
  • 2 tbsp olive oil

Method:

  1. Prepare the Marinade: Combine yoghurt, sumac, pomegranate molasses, tahini, salt, honey, black pepper, and citrus juices in a large bowl. Mix until smooth.
  2. Marinate the Chicken: Coat the chicken drumsticks thoroughly in the marinade. Allow them to marinate for at least 30 minutes, although an overnight stay in the fridge would deepen the flavor beautifully.
  3. Assemble the Dish: Preheat your oven to 180°C (356°F). Arrange the marinated chicken, onions, and carrots in a large baking dish. Drizzle with olive oil.
  4. Bake and Infuse: Pour water over the dish to keep the chicken moist as it cooks. Cover with foil and bake for 1 hour.
  5. Finish with Flair: Remove the foil and continue baking for another 30 minutes, allowing the chicken to turn golden-brown and slightly crispy.
  6. Serve and Savor: Enjoy this aromatic dish with a side of rice, warm bread, or a fresh salad, inviting friends and family to share in its delightful flavors.

In sharing this recipe, I hope it brings warmth to your kitchen and creates delectable memories that you, too, will cherish and pass on. Cooking is, after all, an expression of love, and through this Sumac and Pomegranate Molasses Chicken, may love and happiness find a place at your table
